Guinness Beef Chili

Guinness Beef Chili is rich and hearty with just the right amount of spice. It is simple to make with ground beef, stout beer, crushed tomatoes, garlic, onions, and two types of chili powder.

This delicious chili is perfect for game day, St. Patrick’s Day, or any day of the year that you are looking for a big bowl of comfort food.

This has become our family’s favorite chili recipe, and it is easy to up the heat for those who like to scorch their mouths!

📋 What you will need

Guinness Beef Chili ingredients.
  • Olive oil to sauté  the diced yellow onion and ground beef.
  • Cumin, chili powder, and smokey chipotle chili powder give this chili it’s layers of flavor, while the brown sugar gives it just a hint of sweetness.
  • White and red kidney beans to make it thick and hearty.
  • Crushed tomatoes ties it all together and Guinness stout beer gives it depth of flavor without watering it down.
  • Your favorite toppings: diced red onions, sliced green onions, sliced jalapeños, fresh cilantro, sour cream, grated cheese, etc.

🧑🏻‍🍳 How to make Guinness Beef Chili:

Heat oil in a large Dutch oven over medium heat. Add the onion and cook for 3 to 4 minutes to soften.

Add the ground beef and garlic. Stir to combine and cook until meat is no longer pink.

Stir in the cumin, chili powders.

Seasonings added to the ground beef mixture.

Then stir in the tomatoes and beans.

Add the Guinness and brown sugar, and stir to combine.

Cover and simmer for 1 to 1.5 hours. Serve garnished with your favorite toppings like; shredded cheese, diced red onions, sliced jalapeños, green onions, and sour cream.

  • 1.5 pounds ground beef
  • 11.2 ounce bottle Guinness Draught
  • 2 tablespoons olive oil
  • 1 cup yellow onions diced
  • 15 ounce can red kidney beans drained and rinsed
  • 15 ounce can white kidney beans drained and rinsed
  • 28 ounce can crushed tomatoes or diced
  • 2 large cloves garlic minced
  • 2 tablespoons ground cumin
  • 1 – 2 tablespoons chili powder
  • 1 tablespoon chipotle chili powder
  • 1 tablespoon organic brown sugar
  • your choice of toppings optional

Instructions

  • Heat oil in a large Dutch oven over medium heat. Add the onion and cook for 3 to 4 minutes.
  • Add the ground beef and garlic. Cook until meat is no longer pink.
  • Stir in the cumin, chili powders, tomatoes, and beans.
  • Pour in the Guinness and brown sugar, stir to combine.
  • Cover and simmer for 1 to 1.5 hours.
  • Serve garnished with sour cream, shredded cheese, diced red onions, sliced jalapeños, and green onions.

Notes

  • I always add sugar to recipes with canned tomatoes, it helps take the acidic edge off.
  • You can use any ground beef; 85/15, 90/10, 80/20.
  • This recipe will work with any brand of stout beer.

  6. Made this tonight for St. Patty’s Day dinner. Followed the recipe to a T and it was way too spicy for us! I’d cut back the chipotle chili powder to a tsp, not a Tbs. We added a lot of sour cream to tame it, Irish cheddar to fit the theme and green onions. Overall my family enjoyed the chili, but if I make it again, I will be taming the amount of chili powder heavily.
