Cafe Mocha Cupcakes & happy cassi day

Today, Princess Cassi turns 19 years old!!!  She is currently in Venice, Italy sailing around on a private boat…what a life!

The rotary sponsors several trips throughout the year.  This trip is to Croatia, with side trips to other countries, including Venice.  She is one very lucky young lady 🙂  So far she has been tagged in a photo while attending Soiree Playboy…..WHAT?

and has developed a love of wine, in fact she has already told me that she is not happy about not being able to purchase wine for 2 whole years after she comes home!

I am really glad to see that she is having so much fun, I just hope the rest of her life is as big of an adventure 🙂

In honor of your birthday, I have baked you some cupcakes.  You will notice…they do not contain any alcohol, as per your usual request 🙂  Although, I bet I could make some with wine that you would like!!!

They turned out really pretty, but they didn’t look like a cafe mocha cupcake!  So I scraped off the blue beads, and drizzled some chocolate syrup over the top, and poured on some sprinkles…..Voila!

I also switched out the liners!

Now that LOOKS like a Cafe Mocha Cupcake!

Back here in Iowa, my son’s trials and tribulations continue…he was rear ended on his way home from work 🙁  Boy, when it rains it sure pours…

You should not be able to see the ground, thru the trunk!

People need to learn how to drive!!!  Car 1 – decided to make an illegal left turn into a gas station…at 4:20pm…at one of the busiest intersections in town…across a turn lane!  Car 2 – slammed on his brakes…all good!  Car 3 (Alex) slams on his brakes…all good.  Car 4 (big Chevy truck) slams on his brakes…barely misses Alex!  Car 5 – Runs Red Light…slams into Chevy truck…which then slams into Alex.  Thankfully, car 1 made his turn and car 2 was starting to move forward, or Alex would have been squished between 2 vehicles!

He did look quite handsome standing there in his suit…he had a job interview that morning for a promotion at work 🙂  Keep your fingers crossed…..and eat some cupcakes!

Cafe Mocha Cupcakes

Serves 24
Prep time 20 minutes
Cook time 25 minutes
Total time 45 minutes
Meal type Dessert
Deep, rich chocolate cupcakes, with a touch of coffee flavor.

Ingredients

  • 2 Cups granulated sugar
  • 2 Cups unbleached all-purpose flour
  • 3.4 ounce package devil's food instant pudding
  • 3/4 cups unsweetened cocoa powder
  • 1 Tablespoon espresso powder
  • 2 Teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 4 Large organic eggs
  • 3/4 cups canola oil
  • 2 Teaspoons pure vanilla extract
  • 1 1/4 Cups fresh brewed espresso (4) double shots)
  • chocolate syrup (garnish)
  • sprinkles (garnish)

Directions

Preheat oven to 300 degrees.
dry ingredients
Whisk together the dry ingredients in a large bowl.
add eggs
Add the liquid ingredients.
beat
Beat together until smooth, about 2 minutes.
fill liners
Evenly divide batter between 24 cupcake liners, and place in (2) muffin pans.

Bake for 25 - 30 minutes, or until a toothpick comes out clean.

Frost with your favorite icing, and decorate as desired.

Note

You can also bake in (2) 9" round cake pans for 40 minutes.
