Start your morning off with this luscious Papaya Mango Yogurt Parfait with Greek yogurt, slightly sweet and crunchy granola, honey, and of course chunks of tropical papaya and mango!

It is super easy to make and can be made ahead of time for a delicious, ready-to go breakfast.

Recipe inspiration

Cooking with Astrology “Leo” is coming to a close with this delicious Papaya Mango Parfait. It was inspired by the sunshine colors of papayas and mangoes, and continued the Greek theme with thick, rich Greek yogurt!

I originally served them in 14.75 oz wine goblets, because they were the only glasses that I could find at Target. I have come back in and made fruit and yogurt parfaits that are more in line with dietary guidelines. The calorie and carbohydrate counts dropped in half!

Ingredients needed

Ingredients needed to make Papaya Mango Yogurt Parfait.
  • Greek yogurt – full-fat, 2% or non-fat
  • Honey to sweeten and pure vanilla extract to flavor the yogurt
  • Granola – I used Homemade Vanilla Almond Granola but store-bought will work as well. For even more tropical flavor try the Pina Colada Granola!
  • Fresh papaya and mango. The papaya shown above is a “green” papaya. Yellow/red flesh papaya was not available.

How to make Papaya Mango Parfait

Mix the yogurt, honey and vanilla together until smooth and well combined.

Greek yogurt, honey and vanilla extract in a small bowl.

Spoon 0.25 cup of yogurt into the bottom of a glass, or small bowl.

Sprinkle .25 cup of granola over the yogurt.

Serve immediately or cover and store in the refrigerator for up to 5 days.

Recipe Notes & Tips

  • For vegan parfaits – use coconut yogurt and substitute agave nectar or maple syrup for the honey.
  • These parfaits are gluten-free if using certified gluten-free oats. Double-check the package if needed.
  • If using flavored yogurt, skip the vanilla and probably the honey. Check the label to see if sugar has been added.

This month’s Cooking with Astrology – Leo meal

Since we are looking out for our Leo friend’s heart, I chose a vanilla, almond organic granola. We could all use the heart healthy benefits of the entire Leo meal! Almonds are packed with fiber, plant omega-3’s, calcium, folic acid, phytosterols, vitamin E, magnesium, and potassium. The papaya is packed with vitamins A, C, E, and K, which are all antioxidants that benefit the cardiovascular system and prevent atherosclerosis.

The tomatoes in the Tomato Pilaf are extremely high in vitamin C and a good source of vitamins A and K. Tomatoes are also loaded with lycopene, an antioxidant that prevents heart disease. Yes, there is a method to my madness!

Ingredients

  • 1 cup Greek yogurt I used Fage 5%
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon honey
  • 0.5 cup granola
  • 1 cup papaya chunks
  • 1 cup mango chunks

Instructions

  • Mix the yogurt, honey and vanilla together until smooth and well combined.
  • Spoon 0.25 cup of yogurt into the bottom of a glass, or small bowl.
  • Sprinkle .25 cup of granola over the yogurt then top with chunks of papaya and mango.
