California Chicken Club Sandwich

I realize that I am posting a California Chicken Club Sandwich the same week that I posted a California Burger, but there is a method to my madness!  You will just have to trust me, and all will be revealed… time!  The truth is, I didn’t want to waste any of this delicious Guacamole.   So I decided to create all of my favorite sandwiches before I made the Beef Enchiladas!California Chicken Club Sandwich by

I also made Crispy Sweet Potato Fries with this sandwich, and I have a big surprise for you on Thursday when I post that recipe….so stay tuned!

Okay, back to the sandwich.  A juicy, flavorful chicken breast, topped with melted cheese, bacon, and guacamole on a toasted homemade hamburger bun…..Yum!  This should make all of the non-beef eating fans happy. 🙂

Start by pounding the chicken breasts until they are even, then cut them into 4 pieces…..

That looks great! I don’t eat pork but I totally think that avocado and turkey bacon make a fabulous combination! I have been toying with trying my hand at making a chicken burger like that so I’ll definitely give it a shot soon.
