A few weeks ago, I was asked to create Chocolate Truffles for the holidays using Four Roses Bourbon and Frontier Co-op cinnamon and vanilla. I put my thinking cap on and started dreaming up recipes. I had a vision in my mind of White Chocolate Snickerdoodle Truffles! So I went to work trying to create my perfect little boozy treats…..

and it was a complete failure…almost. They would not set!! I tried Lindt white chocolate, chocolate chips, Baker’s White Chocolate. Yes, I tried 3 different batches and not one of them hardened and turned out the way I had envisioned them in my head.

But a funny thing happened, I caught myself eating the soft White Chocolate Truffle Dip with a spoon. Huh…so why don’t I go back to the drawing board and create some Dark Chocolate Bourbon Truffles for the boozy treats.

My truffles may not have turned out as expected, but this dip is delicious and simple to make!

How to make White Chocolate Truffle Dip

Start by weighing out your chocolate {10 ounces}.

Finely chop the chocolate and place in a large bowl with the butter.

Place in the microwave and heat for 45 seconds on HIGH. Stir and set aside.

Heat heavy cream and corn syrup in a small saucepan over medium heat until it begins to simmer.

Pour over the chocolate mixture and allow to sit for 2 minutes to melt the chocolate.

Gently stir until the chocolate is completely melted. Gently stir in the bourbon and vanilla and continue stirring until smooth and creamy.

Pour into an 8 x 8 baking dish and place in the refrigerator for at least 1 hour to chill.

Serve in a decorative bowl with gingerbread men or graham crackers. If you’re really feeling festive, mix 1/4 cup of granulated sugar with 2 teaspoons of cinnamon for dipping.

Ingredients

  • 10 ounces white chocolate finely chopped (I used Lindt)
  • 3 Tablespoons unsalted butter
  • ½ cup heavy cream
  • 1 Tablespoon light corn syrup
  • ½ teaspoon pure vanilla extract
  • ¼ cup bourbon I used Four Roses

Cinnamon Sugar (optional)

  • ¼ cup granulated sugar
  • 2 Teaspoons cinnamon

Instructions

  • Weigh chocolate on kitchen scale to reach 10 ounces.
  • Finely chop chocolate and place in a large bowl with butter.
  • Microwave on HIGH for 45 seconds.
  • Stir chocolate and set aside.
  • Heat heavy cream and corn syrup in a small saucepan over medium heat until it simmers.
  • Pour over chocolate mixture and let sit for 2 minutes to melt the chocolate.
  • Gently stir mixture together with a rubber spatula until the chocolate is melted and mixture is smooth and creamy.
  • Gently stir in the bourbon and vanilla.
  • Pour into an 8 x 8 baking dish and place in the refrigerator for at least 1 hour to chill.
  • Serve in a decorative bowl with graham crackers or gingerbread men and Cinnamon Sugar, if desired.

To make the Cinnamon Sugar:

  • Mix sugar and cinnamon together in a small bowl.
