That’s right, she wants me to get my protein from non-animal sources at least 80% of the time. Let me tell you, that is a daunting task!! I could have stopped there, but I had a second idea rolling around in my head and I had to give it a try! BOCA Essentials® Chile Relleno Tacos…..

I cooked one Chile Relleno patty {per person} in a non-stick pan, then chopped it up into bite sized pieces. I heated two tortillas, filled them with lettuce, the chopped up chile relleno patty, shredded cheese, Guacamole, and Pico de Gallo. BAM, meatless tacos!!

Ingredients

  • 4 BOCA Essentials Breakfast Scramble patties cooked
  • 4 English muffins toasted
  • 1 cup grated or sliced cheese of your choice optional
  • spinach leaves
  • 4 tomato slices

Basil Sauce

  • ¼ cup chopped fresh basil leaves
  • ¼ cup olive oil
  • 1 large clove garlic pressed
  • 1 Tablespoon freshly grated Parmesan cheese

Instructions

  • In a small bowl, mix together basil, garlic, oil, and Parmesan cheese, set aside.
  • Heat BOCA Essentials Breakfast Scramble patties in a non-stick skillet with a bit of oil to keep from sticking. Flip and continue cooking until thoroughly heated, about 10 minutes.
  • Toast English muffins.
  • Place spinach leaves on bottom muffin, top with cooked patty, cheese, tomato, and basil sauce.
  • Top with muffin and serve.

  4. When I first saw the breakfast scramble I got excited because it was new and because I like Boca products.The Breakfast Scramble food is a great disappointment. I love Boca and trust them, and I was very surprised to see that the picture on the box had very little to do with its contents, which are mere tired old disks that taste awful.
