You know it is summer when the fresh peaches start showing up in the produce section! I love peaches, and I love finding new ways to eat them. This summer I decided to turn my juicy treasures into a delicious Fresh Peach Crumble for Two……..
You would think that summer had already arrived ,with all of the huge fruit displays at the grocery store. I opted to go with red, white, and blue color scheme of berries to create this crazy delicious, Very Berry Cobbler…just in time for Memorial Day. Serve it with a big scoop of vanilla ice cream and you have the perfect summer dessert……..
It’s Feast ‘n Devour time again, and this month is LEMON!! Wouldn’t it have been weird if I said it was chocolate, since the title says Paleo Lemon Cheesecake? No? Okay then, you are going to love this cheesecake. It is rich and creamy just like a “normal” cheesecake, but has no gluten, refined sugar, or dairy to weigh you down or mess with your stomach……..
What is it about spring and lemons? Lemons grow year round, well in some places, but once the calendar and the clocks change the lemon recipes fill the blogisphere. Not that I am complaining, I love all things lemon!! This year I decided to make a “healthier” version of my all-time favorite lemon cheesecake, so this Paleo Lemon Curd was needed to make it work…..
Raise your hands if you are ready for sunshine and warmer temperatures! I am not quite prepared for full-blown Arizona summer temperatures, but I would like for the rain to stop so the weeds will stop growing, LOL. Until that happens, I will continue to dream of an island paradise of sand, surf, and Pineapple Daiquiri Sorbet……..
Well I made it 3 months without any desserts, I deserve a medal! Whole 30 does not allow any desserts, of any kind, and I wasn’t exactly sure what paleo-fied dessert I wanted to try first. That is until our Feast ‘n Devour group chose Carrots for this months theme, so I knew that I had to make Paleo Maple Carrot Cupcakes with Creamy Maple Frosting……..
The calendar says Spring, but the thermometer says Summer!
