A few years ago I threw a really big Cinco de Mayo party, and silly me did not think to make a Pitcher of Margaritas. Crazy, right? So there I was all night squeezing limes, and measuring out alcohol. I will never make that mistake again!! Not when you can do a little bit of prep, and keep the margaritas flowing for at least part of the night……..
When you are sitting at a table in a Mexican restaurant, everyone stops what they are doing when they hear that familiar sizzling sound and smell the amazing aroma of Grilled Steak Fajitas walking past them. It seems like such a treat to have such a complicated meal prepared for you by trained professionals, right?…
How do you choose a favorite Mexican restaurant? Most people tend to gravitate to the establishment with the best chips and salsa, right? Yes, the Shredded Beef Chimichangas are just as important, but if the chips are stale, or the salsa tastes like tomato paste, it leaves a really bad impression in your memory. This Restaurant-Style Blender Salsa is the exact version of salsa that I love……..

Cinco de Mayo is coming up, and I couldn’t be more excited!! Growing up in California, Cinco de Mayo is almost a state holiday. Everyone gets together for parties with some of the best Mexican food around, and lots of ice cold Coronas and Modelos to cool down the spiciness of the salsa and Creamy Seafood Enchiladas……..
Well it is Spring again, and my allergies are worse than ever!! How is that possible? I left Iowa hoping to leave my allergies behind, but that is apparently not how it works. I guess I didn’t do enough research on the pollen counts in Phoenix, because they are off the charts. The last thing that I want to do while living in a Sudafed induced fog, is cook. I can barely think straight, so playing with sharp knives or remembering to turn things off becomes a major chore. That is where Simple Chicken Enchiladas Verdes comes in……..
While I was on Whole 30 I spent a lot of time perusing cookbooks looking for fun recipes that could be adjusted to make them “safe” to eat…no sugar, gluten, dairy, etc. I must have been craving Mexican food that day because I grabbed my copy of Pati’s Mexican Table and was instantly mesmerized by her Shredded Pork in Acho-Orange Sauce. I was also on an Instant Pot® kick and decided to recreate the recipe and turn it into Instant Pot Ancho-Orange Pulled Pork……..
This Instant Pot Salsa Verde Shredded Chicken is versatile enough to be used as a filling for tacos or burritos, and as a topping for salads! Yes seriously, I have been eating my leftover chicken over salads all week. The chicken turns out moist and tender, with just enough flavor to compliment whichever salad dressing I decide to use……..
My Instant Pot® obsession continues, and this time I turned my Adobo Slow Cooker Chicken into Instant Pot Adobo Chicken. I have no idea why I reversed the words in the title, oh well. Either way you make it, you will end up with juicy, delicious chicken that is perfect as a taco or burrito filling……..
