The weather is chilly, the stores are packed, and you still have to get dinner on the table! What is a frazzled mom to do? Gourmet Tuna Melt to the rescue. Cans of tuna, sharp cheddar cheese, lemons, mayonnaise, and Dijon mustard are staples in my house. I usually have a loaf of Sourdough bread in the freezer, but it is also easy enough to grab at the grocery store, or Panera on your way home after a crazy day of shopping……..

I was in Coeur D’Alene, Idaho for the past week and absolutely loved it!! I love trees, and mountains, and big giant lake that is just down the road. What I don’t love? Verizon internet!! I was basically cut off from the world while I was gone. The internet was soooo slow that it continually stalled and I could only have one screen open at a time!…
I told you I would have another slow cooker meal soon! I did not plan this very well at all, it just worked out that both recipes posted back to back…and they both happened to be beef. 😉 I guarantee that they do not taste anything alike, LOL. Since I served beef for last year’s Cooking with Astrology “Virgo”, I decided to keep the same protein this year as well. I might change things up next year, but you just never know……..
You know what I have just realized? I really enjoy making my own salad dressings. I grew up eating dressings and sauces out of plastic bottles that come from the grocery store. Who am I kidding, I grew up eating everything that came pre-made from the grocery store! I have been working really hard to change that, and make everything that I can from scratch…including this delicious Italian Dressing……..
What is the perfect picnic food? Sandwiches! I grew up eating sandwiches on picnics whether we were at the beach, lake, or the middle of nowhere. They are easy to make, easy to transport, and easy to eat… because they don’t require utensils! I wrapped these Turkey on Ciabatta with Sun-dried Tomato Aioli, Arugula, and Provolone sandwiches in regular parchment paper and tied it up with baker’s twine……..
