Rejection is no fun. Whether it is having your beloved images rejected by the food snob sites, or simply not being chosen to participate in a sponsored campaign. Either way, it is no fun! You want to know something? I have always been leery of trying cranberries. They look like red raisins, and I cannot stand raisins!! But when I received those Cranberry Vanilla Shortbread cookies in the mail for the Great Food Blogger Cookie Swap, I took a deep breath…and a big a bite…and I loved them! Who knew?

This recipe is pretty much the same recipe that we all grew up with, I just made a few tweaks to create the perfect cookie. They rejected my idea, so I don’t have to tell you which brand I used! 😉

My friend Claire {A Little Claireification} jokingly suggested that I should create all of my submitted ideas and post them without the names of the companies, or using their competitors, LOL. Ingredients

  • ½ cup unsalted butter
  • ¾ cups firmly packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 Tablespoon fresh orange zest
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups rolled oats
  • 1 cup dried cranberries
  • ¾ cups chopped white chocolate chunks

Instructions

  • Preheat oven 350 degrees. Line baking sheets with parchment paper and set aside.
  • In a large bowl, beat together butter, brown sugar, and granulated sugar until light and creamy.
  • Beat in eggs and vanilla until well combined.
  • Add flour, baking soda, salt, and orange zest. Beat just until incorporated.
  • Stir in oats, cranberries, and white chocolate chunks.
  • Scoop dough with a cookie scoop and place on baking sheets.
  • Bake until light golden brown, about 12 minutes.
  • Allow cookies to rest on baking sheet for one minute, then move to a wire cooling rack to cool completely.
  • Store cooled cookies in a sealed container.
