I am in the middle of packing, trying to find a house to live in 3,000 miles away, and all I think about today was cheese! Maybe it’s because today is my friend Claire’s birthday and she is a cheese addict? Maybe it’s because I am totally stressed out and Cheese Fondue with Beer is the least logical thing to eat when you are lactose intolerant!

Whatever the reason may be, this Cheese Fondue with Beer really hit the spot! LOL

I started with my lactose-free cheddar cheese, but then felt the need to add Swiss cheese….because fondue is supposed to have Swiss cheese, right? Well mine does, but feel free to use Gruyere, Fontina, or whatever cheese tickles your fancy. 😉

This time around I decided to use a light beer, a Lager actually, rather than wine and it was just as delicious! Feel free to substitute white wine for the beer if you prefer. 🙂

Grate your cheese and toss with the cornstarch to thoroughly coat the cheese…..

Next I tossed the cheeses, beer, Dijon mustard, and pressed garlic into a medium saucepan…..

Heat your mixture over MEDIUM LOW heat, stirring constantly until melted and combined. At one point I was starting to think that it would never combine into a smooth, delicious gooey cheese concoction but then it magically melted…..

I served my fondue with steamed broccoli and cauliflower, and Sauteed Zucchini and Carrots…..

I was going for variety!! I also served fresh cherry tomatoes and button mushrooms {yes, that is chunks of bacon in the corner}…..

Then I chopped up a baguette and pretzel roll, so I create cheese fondue dipped bacon cheeseburgers…..

Oh ya baby, I grilled up a filet and sliced it thin…..

then stacked a slice of beef, a chunk of bacon, and a chunk of pretzel roll and dunked it into the yummy fondue…..heaven!! And of course more veggies…..

Ingredients

Cheese Fondue

  • 8 ounces cheddar cheese (grated)
  • 8 ounces Swiss cheese (grated)
  • 1 tablespoon cornstarch
  • 1 cup lager beer (or wine)
  • 1 teaspoon Dijon mustard
  • 1 large clove garlic (pressed or finely minced)
  • 1/16 teaspoon cayenne pepper

Things to dip into the fondue

  • grilled zucchini and carrots
  • steamed broccoli and cauliflower
  • bread chunks
  • fresh tomatoes and mushrooms
  • sliced filet or sirloin, cooked medium-rare
  • chunks of bacon

Instructions

  • Thoroughly mix grated cheese with cornstarch.
  • Place cheeses, beer, mustard, garlic in a medium saucepan and heat over medium-low heat, stirring constantly until melted.
  • Stir in cayenne and pour into fondue pot with a heat source. (sterno/gas or electric)
  • Serve immediately with bread or pretzel chunks, fresh, steamed, or grilled vegetables, grilled beef, and bacon chunks if desired.
