Are you a carb lover? I am!! The only thing that I usually eat at Thanksgiving Dinner, is the Dinner RollsMashed Potatoes, and Candied Sweet Potatoes, lol. It has been a lifelong battle to find a happy balance between carbs, proteins, and vegetables, but carbs always seem to win that fight! Well I have a new found secret weapon, Simple Cauliflower Mash…..

I know that it sounds a bit crazy, but this Simple Cauliflower Mash tastes just like mashed potatoes! My Irish ancestors may not approve of me turning my back on potatoes for cauliflower, but I think this is a delicious option.

The reason this is Simple Cauliflower Mash, is because I prepared them pretty much the same way that I prepare my mashed potatoes….except for the method of cooking. 😉

How to make Simple Cauliflower Mash:

Place chunks of cauliflower into the bowl of a food processor, and pulse until cauliflower is in little pieces…..

It is best to do this in two batches so they all fit properly!

Place cauliflower rice in a medium saucepan with olive oil, salt and pepper. Cover and cook over medium heat until softened, about 4 – 5 minutes. ….

Remove from heat and add the butter and Cashew Cream. Blend with an immersion hand blender, or a potato masher until smooth…..

Notes:

  • If you do not have a food processor {I have an older version of this one} you can also grate your cauliflower with a box grater.
  • You may also be able to find cauliflower “pearls” in the produce section and you won’t have to do anything but empty the bag.
  • I have this Immersion Hand Blender {affiliate link} and absolutely love it!! It has been getting a workout over the past few days!
  • You want your Cashew Cream to be the consistency of heavy cream.
  • If you are using coconut milk, make sure you shake the can before you open it so it is mixed together.

If you normally add parsley or green onions to your mashed potatoes, go ahead and add them to your cauliflower mash. The whole point here is to make them exactly the same way so you won’t notice the difference….as much. 😉

I really hope all of you are having as much fun as I am on this new Paleo/Whole30 adventure in cooking. Ingredients

  • 1 large cauliflower (cut into chunks)
  • 2 Tablespoons olive oil
  • 3 Tablespoons clarified butter (ghee, coconut oil)
  • ¼ cup Cashew Cream (or coconut cream {in a can})
  • sea salt and black pepper (to taste)

Instructions

  • Place chunks of cauliflower into the bowl of a food processor, and pulse until cauliflower is in little pieces.
  • Place cauliflower rice in a medium saucepan with olive oil, salt and pepper.
  • Cover and cook over medium heat until softened, about 4 - 5 minutes.

Notes

  • Serving size will vary based on how you are using the Cauliflower Mash, and the size of your cauliflower.
  • If potatoes are too dry, add additional cashew cream to thin.
