Is it just me, or does pork seem like a fall/winter type meal? Bacon and ribs are normally served year round, but chops and tenderloin seem to be make more sense in the fall. Maybe it’s because we tend to serve apple sauce with our pork chops, or I’m just completely delusional and not making any sense right now, lol. I guarantee that your family will enjoy this Pecan-Crusted Pork Tenderloin anytime of the year……..
Are you a fan of sweet potatoes? I guess that’s a strange question since you are here reading a post about Mashed Sweet Potatoes, but I am curious. I love sweet potatoes, but my son can’t stand them. Actually, I am the only one that eats them on Thanksgiving, but it’s tradition so they must be served with the meal or the Thanksgiving gods might attack us with wishbones in our sleep……..
Are you a carb lover? I am!! The only thing that I usually eat at Thanksgiving Dinner, is the Dinner Rolls, Mashed Potatoes, and Candied Sweet Potatoes, lol. It has been a lifelong battle to find a happy balance between carbs, proteins, and vegetables, but carbs always seem to win that fight! Well I have a new found secret weapon, Simple Cauliflower Mash……..

I moved to Arizona thinking that I would be surrounded by sunshine 365 days a year, but moving back to Hawaii would have been a better idea! Unlimited sunshine, surrounded by the ocean, and more fresh fish that you could possibly imagine!! I created this Ahi Poke Stack as a “grown-up” version of the traditional Ahi Poke salad that is served everywhere you go on the islands……..
Can you believe that it is already the middle of July? I am sitting here scratching my head, wondering where the time has disappeared to? Before you know it, summer will be over, the kids will be back in school, and I will be posting pumpkin recipes. Yikes…I’m not ready. The last thing that I want to see is snow…ever again!!…
