  • 1 Tablespoon olive oil
  • 1/4 cup yellow onion (finely chopped)
  • 1 large clove garlic (finely minced or pressed)
  • 1/3 cup bourbon (I used Four Roses)
  • 1/4 cup blackberry preserves/jam
  • 1/4 cup fresh blackberries
  • 2) 5-ounce salmon filets (wild-caught)

  • Heat olive oil in a large skillet. Add the chopped onions and cook until soft and translucent, 3 to 5 minutes.
  • Stir in the garlic, and cook for 1 minute.
  • Add the bourbon, blackberry preserves, and blackberries. Stir to combine and bring to a low boil.
  • Add the salmon fillets and spoon sauce over the top of salmon.
  • Cook and baste with sauce for 9 to 11 minutes, until salmon is cooked through. If using a thermometer, cook until center reaches 135 degrees.
  • Drizzle remaining sauce over salmon and serve with Goat Cheese Whipped Potatoes and Sauteed Zucchini and Carrots.

  • Do not overcook your salmon!  Error on the side of under cooked versus over cooked.
  • If you do not like blackberries, or you are allergic to them like my son it, substitute blueberries.
  • If you do not have bourbon {I used Four Roses} you can substitute a fruity, red wine like a merlot.
  • The recipe is written for 2 servings which is super simple to double, it is quite literally half of my original recipe.
