Ingredients
2
cups
water
1
cup
unsweetened CashewMilk
.06
teaspoon
sea salt
(a pinch)
1
cup
steel cut oats
1
teaspoon
pure vanilla extract
1
teaspoon
ground cinnamon
1
tablespoon
agave nectar
(or honey - add 2 tablespoons for additional sweetness)
.33
cup
dried cranberries
(diced)
.25
cup
toasted walnuts
(chopped)
Instructions
Add the water, milk, salt, and oats to to the Instant Pot.
Twist the lid to lock into place. Select the Manual function and press the + and - to adjust the time to 3 minutes.
When the Instant Pot beeps, allow it to sit until the pressure drops and the lid opens easily. {this can take 10 to 15 minutes}
Stir in the vanilla, cinnamon, agave nectar, walnuts, and cranberries. Adjust the sweetness as needed.
Serve with additional cranberries and walnuts.
Store leftovers in the refrigerator for up to 4 days. Reheat in the microwave.
Notes
If you do not like dried cranberries substitute raisins or any other dried fruit of your choosing.
I chose toasted walnuts, but any nuts will work.
Do not use regular milk! Apparently it will scorch so you must use a non-dairy milk.
