In a large bowl, mix together all of the sausage ingredients.
Heat a large non-stick skillet over medium heat. If using very lean pork, add 1 Tablespoon of olive oil.
Add the sausage mixture to the skillet and break apart with a spatula or wooden spoon.
Thoroughly cook the sausage until no longer pink.
Mix with scrambled eggs and greens, or allow to cool and use in your favorite recipes.
To make Pork Breakfast Sausage Patties
Mix all of the sausage ingredients together in a large bowl.
Divide the mixture into 1/4 cup portions. Place them on a sheet of parchment paper and flatten into 2 1/2 by 1/2-in circles. Cut the parchment paper between each patty to separate them.
Heat 1 Tablespoon of oil in the same non-stick skillet. Add 4 patties and cook halfway, then flip over and continue cooking until cooked through (165 degrees).
Remove from skillet and cook the remaining sausage patties.

Yes, you can substitute chicken for the pork.
If your sausage is marked extra-lean, it will probably stick to the pan if you do not add oil.
