Ingredients

  • 2 Tablespoons sunflower or canola oil separated
  • 2 whole green onions sliced
  • 1 clove garlic minced
  • 2 large eggs lightly beaten
  • sea salt & fresh ground pepper to taste
  • 2 cups steamed rice
  • 2 Tablespoons soy sauce

Instructions

  • When your rice is almost finished cooking {about 5 minutes left}, heat the oil, then add the green onions and garlic.
  • Do not worry if you do not have a wok, I have also make this Shrimp Fried Rice in a large skillet. Season your eggs with salt and pepper, lightly beat them, and add them to the pan.
  • Once they are set, push them to the edges of the pan add more oil, then add the shrimp.
  • Toss add the cooked rice.
  • Add the cooked peas and carrots, along with the soy sauce.
  • Toss to combine and cook until heated through.
