filtered water

granulated sugar

tablespoon
grated ginger root
peeled and grated or chopped
Instructions
Place the water and sugar in a medium sauce pan and stir to combine.
Heat over medium-high heat until completely dissolved, about 3 to 5 minutes.
Once mixture comes to a boil add the ginger, cover, remove from heat and allow to cool completely.
Strain the syrup through a fine-mesh sieve into a measuring cup or jar.
Store the syrup in an air-tight container in the refrigerator for up to two weeks. If it begins to become cloudy or moldy, discard immediately.
Notes
Substitute dark brown for a deeper flavor, or coconut sugar for variety.
Add the peels of two lemons for a lemon-ginger syrup, two limes for a lime-ginger syrup, or two oranges for an orange-ginger syrup.
Add a quarter cup of rosemary or thyme with the ginger for an herbal infusion.
One to two cups of rhubarb, cranberries, blueberries, or pineapple can be added with the ginger for a fruity-ginger syrup.
Add additional ginger for an even stronger taste, and allow to set longer before straining.
