1poundzucchinicut into 0.5-inch diagonal slices - about 2 medium
0.5poundyellow squashcut into 0.5-inch diagonal slices - 1 squash
1smallred onioncut into 0.5-inch slices
4tablespoonsolive oildivided*
sea salt and black pepperto taste
1tablespoonsminced garlicmixed with 2 tablespoons of olive oil*
1cupshredded mozzarella
0.5cupfeta cheese
0.5tablespoonfresh thyme leavesor fresh herbs of your choice
0.5tablespoonfresh oregano
Instructions
Preheat the grill and bring the temperature up to 375 degrees (medium-high heat).
Place the zucchini, squash and onion slices on a baking sheet and brush both sides with one tablespoons of olive oil, then sprinkle with sea salt and black pepper.
Place on the grill in a single layer, and cook until charred on both side and just starting to soften, about 2 minutes per side.
Alternate method:
Place the squash slices on a heated grill pan on the grill or on the stove-top. Cook until grill marks form, then flip them over to cook the other side.
Remove the cooked squash from the grill, set aside
Press your pizza dough out to form a 12-inch circle on a sheet of aluminum foil brushed with olive oil. Brush the top with oil as well.
Place the pizza dough onto the grill. Cover (close the lid) and cook for 2 minutes or until grill marks form on the bottom. Flip the pizza crust over and grill for an additional minute or two until golden.
Remove the pizza crust from the grill with a pizza peel. Brush the crust with garlic oil. Sprinkle the mozzarella cheese over the top, then arrange the grilled squash slices on top.
Slide the pizza back onto the grill, close the lid and cook just until the cheese melts, two to three minutes.
Remove the pizza from the grill and top with crumbled feta cheese, chopped grilled onion, fresh oregano and thyme. Slice and serve immediately.
Notes
For those who like things spicy, sprinkle crushed red pepper flakes over the finished pizza.
For those who like things saucy, drizzle Balsamic Glaze over the finished pizza.
Substitute any other types of squash that you like.
Do not panic if you crust sticks to the foil and folds onto itself. Use the tongs to lift and adjust the crust the best you can. It does not need to look perfect, grilled pizzas should look rustic.
The original version of this pizza did not include mozzarella cheese. It was added to help keep the squash from sliding off. Gruyere, provolone, and parmesan are excellent choices as well.
What if I have leftovers?Allow pizza to cool completely then store in an air-tight container in the refrigerator for up to 4 days. Reheat in an Air Fryer, 350 degree oven, or microwave before serving.
