Ingredients

olive oil

yellow onion
(finely chopped)

large clove
garlic
(finely minced or pressed)

bourbon
(I used Four Roses)

cup
blackberry preserves/jam
¼
cup
fresh blackberries

salmon filets
(wild-caught)
Instructions
Heat olive oil in a large skillet. Add the chopped onions and cook until soft and translucent, 3 to 5 minutes.
Stir in the garlic, and cook for 1 minute.
Add the bourbon, blackberry preserves, and blackberries. Stir to combine and bring to a low boil.
Add the salmon fillets and spoon sauce over the top of salmon.
Cook and baste with sauce for 9 to 11 minutes, until salmon is cooked through. If using a thermometer, cook until center reaches 135 degrees.
Drizzle remaining sauce over salmon and serve with Goat Cheese Whipped Potatoes and Sauteed Zucchini and Carrots.
Notes
Do not overcook your salmon! Error on the side of under cooked versus over cooked.
If you do not like blackberries, or you are allergic to them like my son it, substitute blueberries.
If you do not have bourbon {I used Four Roses} you can substitute a fruity, red wine like a merlot.
The recipe is written for 2 servings which is super simple to double, it is quite literally half of my original recipe.
