Ingredients

unsalted butter
softened (substitute coconut oil or vegan butter for vegan)
1/2
cup
raw sugar

teaspoon
pure vanilla extract
zest of one lemon

finely ground Almond Meal/Flour
I used Bob's Red Mill

oat flour

Instructions
Preheat oven to 300 degrees. Line two baking sheets with parchment paper and set aside.
In a large bowl, beat together butter, vanilla, and raw sugar until creamy.
Add the almond flour/meal and oat flour. Stir to combine.
Use a 1 Tablespoon cookie scoop or roll into 1 1/2-inch balls and place on baking sheets.
Bake for 30 to 35 minutes. Allow to cool on baking sheet for 10 minutes.
Move cookies to a wire cooling rack and cool completely before serving.
