This classic Monster Cookies recipe with peanut butter, oats, chocolate and M&MS's gets a Halloween makeover with the addition of candy eyes and colorful sprinkles!

Preheat oven to 350 degrees. Line 3 baking sheets with parchment or silicone liners, set aside.
In a large bowl, beat the butter and peanut butter together to combine. Add the egg, vanilla, and sugars and beat until light and creamy.
Add the flour and baking soda and beat just until combined.
Stir in the oats, chocolate chips, and M&M's.
Scoop the dough and place on prepared baking sheets. I used a #30 {2 tablespoon} sized scoop.
Lightly press to flatten cookies. Top with candy eyes, additional M&M's and sprinkle with colorful sprinkles.
Bake for 10 to 11 minutes. Cookies with be slightly browned along the edges, but still soft in the center.
Remove from oven and allow to cool on the baking sheet for 5 minutes before moving to a wire cooling rack.
Notes
All ovens bake differently, cooking times are approximate. Mine were done in 11 minutes.
I only had old-fashion oats in the pantry (last time), which gives these cookies a bit of a crunch. I used quick oats this time and they just disappear into the cookie.
