2cupssliced, fresh peachesI used 4 peaches, and I peeled them first which is optional
0.5cupgranulated sugar
0.5cupunsalted butter1 stick
.75cupsall-purpose flour
.75cupsgranulated sugar
2teaspoonsbaking powder
.25teaspoonground cinnamon
.25teaspoonsalt
.75cupsmilkregular or non-dairy at room temperature
Instructions
Preheat oven to 375° F.
Place your peach slices into a large bowl and sprinkle with a half-cup granulated sugar. Stir to thoroughly coat the peaches with the sugar and set aside.
In a separate bowl, combine flour, three-quarter cup of sugar, baking powder, cinnamon, salt, and milk, and set aside.
Melt a half cup (1 stick) of unsalted butter in a cast iron skillet. Pour the batter over the melted butter – do not stir!
Now very carefully spoon the peach filling over the batter including the peach juices – do not stir!
Bake for 35 to 45 minutes, until crust is lightly golden brown and puffy.
Allow to cool for a bit, then serve this delicious cobbler with a scoop of Vanilla Ice Cream or fresh whipped cream.
Notes
You can substitute frozen (preferred) or canned peaches if fresh peaches are not available. Make sure to thaw the frozen peaches before mixing with sugar. If using canned, drain any excess liquid before using in the recipe.
Allow leftover cobbler to cool completely and place in an airtight container. Store in the refrigerator for up to 4 days.
