Ingredients

boneless pork loin chops

Tablespoon
olive oil

Tablespoon
unsalted butter

cooking apples
I used Braeburn (peeled, cored, and sliced)

large cloves
garlic
minced

teaspoon
raw sugar
2/3
cups
dry, hard cider
(I used Crispin - or substitute apple cider)

teaspoon
apple cider vinegar

Tablespoon
wholegrain mustard
I used Grey Poupon

teaspoons
chopped
fresh thyme
springs of thyme
to garnish
Instructions
Heat oil in a large skillet over medium heat. Cook pork chops until well browned on both sides, about 10 to 15 minutes.
Remove the pork chops and keep warm. Add the butter and apple slices to the skillet, and cook until the apples begin to brown.
Add the garlic and sugar, and cook for 1 minute.
Stir in the hard apple cider, mustard, apple cider vinegar, and chopped thyme. Boil for a few minutes until sauce bubbles and thickens slightly.
Place pork chops on a plate, and top with the apple cider sauce. Serve with creamy mashed potatoes.
Notes
Substitute regular apple cider for a non-alcoholic version.
