Preheat oven to 350 degrees. Spray a bundt pan with cooking spray (for baking). Set aside.
Whisk together dry ingredients.
Add liquid ingredients, and beat together with a mixer.
Add blue gel food coloring. I do not have an exact amount, I scoop some out of the jar with a toothpick and swirl the toothpick in the batter to remove. If the color is not correct, add more.
Beat for an additional 1 - 2 minutes until smooth and well blended.
Pour into prepared pan and and tap on the floor or counter to remove air bubbles. Bake for 55 - 60 minutes, or until a toothpick inserted in the center comes out clean.
Remove from oven and allow to cool in the pan for 10 minutes.
Remove from pan by placing a wire cooling rack over the cake and flipping the pan upside down.
For the Glaze:
Pour powdered sugar into a small bowl.
Add liquids, and whisk together until smooth.
Add gel coloring and mix until you achieve your desired color.
Place cooking rack over a large dinner plate. Using a large spoon, pour the glaze over the top of the cake.
The glaze with run over the cake and collect on the plate. Move cake and rack to a second clean plate. Continue pouring the glaze over the cake, switching back and forth between plates, until all of the glaze is now on the cake.
Allow to cool completely, for at least 12 hours before serving. Do not ever eat these cakes while still warm, the alcohol is too strong and will not have a pleasant taste!
Notes
Blue Curacao is the name brand for an orange flavored liqueur. Any blue "Hawaiian" schnapps will work.
If you cannot find a blue schnapps, substitute triple sec and add blue food coloring.
