flour tortillas

un-salted butter for grilling

grated cheese
I used white and sharp cheddar

Roma tomatoes
cut into wedges
salsa and sour cream for serving
Instructions
Brush one side of each tortilla with melted butter, set aside.
Heat skillet over medium-high heat. Place one tortilla butter side down on skillet.
Add a handful of grated cheese, and a scoop of chicken fajitas to the tortilla.
Top with second tortilla, butter side up, and cook until golden brown, about two minutes.
Carefully flip to the other side with a large spatula. If any of the filling falls out, just lift up the tortilla and add it back in.
Cook until golden brown and cheese is melted.
Cut quesadilla into wedges and serve with sour cream, salsa, guacamole.
