sweet potatoes
peeled or not, your choice

olive
sea salt
to taste
Instructions
Slice sweet potato as thin as possible. Use a mandolin if you have one to make them consistent.
In a large bowl, toss potato slices with oil.
Place on a parchment paper covered plate and microwave on HIGH for 3 to 4 minutes.
Sprinkle with sea salt and set aside to dry completely.
Notes
I have a habit of peeling every potato that ends up in my hands. They do not need to be peeled if your prefer to leave the skin on.
Each microwave cooks differently so keep an eye on them until you know how they will cook in yours.
