Ingredients

unsalted butter
1 stick, softened

granulated sugar

egg
at room temperature

teaspoon
pure vanilla extract

unbleached all-purpose flour

cocoa powder
¼
teaspoon
salt
¾
teaspoons
baking soda

cup
Nestle dark chocolate and mint morsels
decorative sugar sprinkles
optional
Instructions
Preheat oven to 350 degrees. Line 3 baking sheets with parchment paper and set aside.
In a large mixing bowl, beat together the butter and sugar. Add the egg and vanilla and beat until light and fluffy.
Add the flour, cocoa powder, salt, and baking soda. Mix until thoroughly combined.
Stir in the chocolate morsels.
Form 1 Tablespoon of dough into small balls, I use a small cookie scoop. Roll tops in sugar crystals if desired.
Place on baking sheet about 1 1/2 inches apart.
Bake for 10 - 12 minutes. The tops should still be soft.
Remove from oven and let sit on baking sheet for 6 - 7 minutes to set.
Remove to a cooling rack and allow to cool completely.
Store in an airtight container, or freeze for several weeks.
