Ingredients

small yukon gold
or red potatoes, 12-15 depending on size

cup
olive oil

teaspoon
garlic powder
1
teaspoon
onion powder
2
teaspoons
Italian seasoning
½
teaspoon
paprika
½
teaspoon
sea salt
½
teaspoon
ground black pepper
½
cup
panko crumbs
¼
cup
grated Parmesan cheese
plus more for garnish
Instructions
Preheat oven to 450 degrees.
Mix all dry ingredients together in a small bowl. Set aside.
Slice potatoes in half width wise, then slice into quarters and place in a large bowl.
Add the olive oil and toss together to coat.
Add the panko / spice mixture and mix to coat all the potatoes.
Pour potatoes onto a large baking sheet.
Bake for 30 minutes, or until potatoes are soft and crispy.
Sprinkle with additional Parmesan cheese and serve.
