Add chili powder, salt, paprika, sugar (if using), cumin, garlic powder, onion powder, cayenne pepper, cinnamon and coriander to a small jar or bowl. Stir to combine.
Use immediately or store in a sealed container for up to 3 months.
Notes
You can taste the cayenne with a 1/4 teaspoon. Use less or omit to cut the spiciness.
Use smoked paprika for a smokier flavor, sweet paprika for a sweeter seasoning.
This recipe make approximately 3 Tablespoons of seasoning, which should be enough to coat 2 pounds of steaks or chicken.
The recipe can be doubled or tripled by adjusting the serving size in the recipe card.
