1.75cupheavy whipping creamsubstitute canned coconut milk - shake before using

.33cuphoneyuse more if peaches are not sweet enough

0.5teaspoonkosher salt
3tablespoonsvodkaor vanilla flavored
Instructions
Place cream cheese, heavy cream, honey, salt, vanilla, diced peaches, and vodka, if using, into a blender and puree until creamy.
Pour the peach mixture into a large loaf pan (parchment paper is optional), or freezer safe container, and spread out evenly using a rubber spatula.
Cover with plastic wrap, pressing down gently so it touches the surface of the ice cream, and freeze 5-6 hours, or overnight.
You may need to allow it to defrost a bit (about 15 minutes) at room temperature to make it scoopable.
Serve your creamy, delicious ice cream in a waffle cone or dish with sliced, fresh peaches or crumbled cookies.

Notes
The vodka is added to keep the ice cream from turning into a solid mass. It still freezes solid, but you can still get a scoop through it. Omit the vodka if you wish, it adds no flavor.
Add peach schnapps instead of vodka for even more peach flavor.
Substitute chopped, frozen peaches if you like.
If using canned peaches, make sure to drain them thoroughly before using. The extra moisture will make the ice cream icy instead of creamy.
Store ice cream in the freezer, in an airtight container for up to one month for best flavor and texture.
