All you need is a blender and 4 ingredients to create this bubbly and refreshing Raspberry Bellini Cocktail! It is the perfect drink to celebrate your special occasion.
Place the raspberries in a blender. Puree until smooth.
Pour the puree into a fine-mesh strainer and use a spoon or small silicone spatula to push the puree through into a bowl. Discard the seeds.
Stir the Chambord and Cointreau into the raspberry mixture.
Pour 2 ounces of the raspberry mixture into four champagne flutes. Top with prosecco. Allow the bubbles to settle, then top off with additional prosecco. Gently stir the cocktail with a cocktail stirrer or bamboo skewer to blend. Serve immediately.
Notes
To sweeten your cocktail, add .5 teaspoon of Simple Syrup to each glass, or add two tablespoons of fine sugar to the raspberries before they are pureed.
