This homemade Lobster Pizza recipe is a must make. The crispy crust is topped with a lemon-garlic sauce, three cheeses, lobster meat and fresh tarragon.
5tablespoonsunsalted buttercut into cubes, divided
.25cupdiced yellow onion
2clovesgarlicminced
2tablespoonslemon juice
2tablespoonswhite wine
8ouncescooked lobster tailcut into .5-inch pieces
1poundpizza dough
.75cupshredded mozzarella cheese
.25cupshredded fontina cheese
.25cupgrated Parmesan cheese
2tablespoonsfresh tarragon leavestorn
Instructions
Place a pizza stone on the lowest oven rack and heat the oven to 500 degrees for one hour. Allow the pizza dough to rest covered on the counter while the oven is heating.
Melt one tablespoon of butter in a skillet over medium heat. Add the onion and cook until softened. Add the garlic and cook for one additional minute.
Pour in the wine and lemon juice. Reduce heat to medium-low and simmer to reduce by half.
Add the remaining 4 tablespoons of butter and stir to thoroughly combine. Add the chopped lobster to the skillet and toss to coat. Remove from stove and set aside.
Pat and stretch the pizza dough to form a circle. Place on a cornmeal dusted pizza peel.
Tilt the skillet while holding the lobster meat in place at the top. Brush the lemon-garlic sauce over the top of the pizza dough with a pastry brush.
Sprinkle with a little more than half of the grated cheese. Spread the lobster meat evenly over the top of the cheese, then sprinkle with remaining cheese.
Slide the pizza onto the preheated pizza peel and bake until golden brown and the cheese is melted and bubbly, about 8 to 12 minutes.
Sprinkle the tarragon leaves over the top of the pizza and serve.
Notes
Feel free to use store-bought dough if you prefer.
My pizza baked for 10 minutes, but each oven is different so your cooking time may vary.
Substitute seafood stock for the wine if needed.
Substitute sliced basil or parsley for the tarragon if desired.
This pizza would be just as delicious with shrimp or a combination of seafood.
