Brush 2 tablespoons of olive oil over the cod filets, then sprinkle with salt and pepper.
Set your air fryer to 7 minutes at 400 degrees on Air Fry and allow to preheat. Add the seasoned filets when the air fryer displays "Add Food", and close the basket. Do not flip the fish halfway through cooking, it is too fragile and will fall apart.
When fish is cooked, remove from the air fryer and place on a serving plate.
For the Cod - in the Oven
Preheat oven to 400 degrees.
Place cod in a baking dish or on a foil-lined baking sheet. Brush with 2 tablespoons of oil and sprinkle with salt and pepper.
Bake for 10 to 12 minutes, or less for thinner filets, to 145 degrees internal temperature. Fish should be opaque and flake easily with a fork
For the Bruschetta:
While the cod is cooking, toss the cherry tomato halves, with the sliced basil, 1 tablespoon of oil, lemon juice, some salt and pepper.
Top cod with bruschetta mixture and serve.
Notes
For those of you that are opposed to using oil, you can skip it, but you run the risk of your fish drying out while cooking. It is being cooked with moving, hot air.
If your cod filets are thinner than 1-inch, reduce the cooking time about 2 minutes per quarter inch. You can always put it back in if it is not done, but you cannot un-cook fish.
Cook cod until the internal temperature reaches 145 degrees with an instant read thermometer.
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer for 5 minutes at 280 degrees.
