1bag shredded coleslaw mixor 1 head of cabbage sliced thinly
2carrotsshredded or cut into matchsticks
5green onionsthinly sliced
¼cupchopped Cilantro
1cupmayonnaise
2Tablespoonssoy sauce
1lemonthe juice of one lemon
2Tablespoonsapple cider vinegar
⅓cuphoney
1teaspoonground black pepper
1Tablespoonsesame seeds
2large applesthinly sliced (Granny Smith for tart, Fiji for sweet)
Instructions
Place cabbage, carrots, green onions, and cilantro in a large bowl. Set aside.
In a separate bowl, whisk together mayonnaise, vinegar, lemon juice, honey, soy sauce, sesame seeds and pepper. Set aside.
Peel and slice apples and toss with cabbage mixture.
Pour the sauce over the cabbage mixture and toss to combine.
Cover and refrigerate until ready to use.
Notes
I cut my carrots into matchsticks this time, but I think I prefer them shredded. I cheated and used a bag of coleslaw mix. I was having trouble finding Asian cabbage, and I wanted the mix of colors I chose Granny Smith apples because I knew that my barbecue sauce would be sweet. If using a tangy or spicy barbecue sauce, you might prefer to use sweeter apples, like Fiji or Gala.
