These M&M's Almond Granola Bars are the perfect snack for all of the little and big snackers in your life. They are chewy and portable for those on the go!
.33cupcoconut nectarcan substitute maple or agave syrup
2tablespoonsalmond butter
1tablespoonsafflower oil
1tablespoonbrown sugar
1teaspoonpure vanilla extract
0.5cupmini m&m'sdivided
Instructions
In a large bowl, combine flour, puffed rice, oats, almonds, and salt. Set aside.
In a smaller bowl, combine the almond butter, safflower oil, brown sugar, and coconut nectar. Heat in the microwave for 30 seconds, remove and stir to dissolve sugar.
Add the vanilla extract, stir and pour over the dry mixture.
Stir mixture until thoroughly combined.
Stir in .25 cup of mini M&M's.
Line an 8 x 8 baking pan with parchment paper. Make sure to completely cover all four sides.
Pour the mixture into baking pan, pressing down to pack down the mixture. Sprinkle the remaining M&M's over the top of mixture. Use a small piece of parchment paper to keep your hands clean.
Place in the refrigerator to chill for 1 hour.
Use the edges of the parchment paper to remove the granola bars from the pan.
