How many of you are looking for healthier snacks for your kids? Both of my kids love chewy granola bars, but some of the ingredients leave me scratching my head. I decided to go into the kitchen and create a healthier and still delicious snack. These M&M’s Almond Granola Bars are the result.
I went with chewy, no-bake granola bars because no one wants to sit and wait for their treats to bake in the oven! They are also bendable, and super portable.
How to make M&M’s Almond Granola Bars
Mix together the flour, oats, sliced almonds, puffed rice and salt in a large bowl…..
In a smaller bowl, mix together the coconut nectar, almond butter, brown sugar, and safflower oil. Heat in the microwave for 30 seconds, stir to combine…..
Stir in the vanilla extract, and pour the mixture over the oats mixture until thoroughly combined. Stir in a 1/4 cup of mini M&M’s {I didn’t want them to melt}….
Line an 8 x 8 baking sheet with parchment paper, and pour in the mixture…..
Sprinkle the remaining M&M’s over the top {if desired}. Press mixture firmly into the pan. I used a small piece of parchment paper to keep my fingers clean. ๐
Place in the refrigerator for 1 hour, remove from pan using the parchment paper as handles…..
Slice and serve.

M&M's Almond Granola Bars
Ingredients
- 3 Tablespoons Teff flour can substitute oat flour
- 1 1/4 cup old-fashioned oats
- 1/2 cup puffed rice cereal
- 1/2 cup sliced almonds
- 1/8 teaspoon fine sea salt
- 1/3 cup coconut nectar can substitute maple or agave syrup
- 2 Tablespoons almond butter
- 1 Tablespoon safflower oil
- 1 Tablespoon brown sugar
- 1 teaspoon pure vanilla extract
- 1/2 cup mini m&m's divided
Instructions
- In a large bowl, combine flour, puffed rice, oats, almonds, and salt. Set aside.
- In a smaller bowl, combine the almond butter, safflower oil, brown sugar, and coconut nectar. Heat in the microwave for 30 seconds, remove and stir to dissolve sugar.
- Add the vanilla extract, stir and pour over the dry mixture.
- Stir mixture until thoroughly combined.
- Stir in 1/4 cup of mini M&M's.
- Line an 8 x 8 baking pan with parchment paper. Make sure to completely cover all four sides.
- Pour the mixture into baking pan, pressing down to pack down the mixture. Sprinkle the remaining M&M's over the top of mixture. Use a small piece of parchment paper to keep your hands clean.
- Place in the refrigerator to chill for 1 hour.
- Use the edges of the parchment paper to remove the granola bars from the pan.
- Cut into squares and serve.
