Shrimp Grilled Cheese – Parmesan topped sourdough bread surrounds garlic and lemon infused Gruyere and Mozzarella cheeses and tender shrimp to create a gourmet grilled cheese sandwich to remember!
6ouncescocktail shrimppeeled, deveined, cooked - about 1.25 cups
1tablespoonlemon juice
.75cupgrated Gruyere cheese
.75cupgrated mozzarella cheese
.25teaspoonground black pepper
4slicessourdough bread
2tablespoonsunsalted buttersoftened
2tablespoonsgrated Parmesan cheese
Instructions
Melt two tablespoons of butter and the olive oil in a small skillet over medium heat. Add the minced garlic and cook until aromatic, about one minute. Stir in the lemon zest and cook for one additional minute.
Add the shrimp and cook until heated through.
Pour the shrimp mixture into a bowl. Drizzle with lemon juice and allow to cool while grating the cheeses.
Stir in the grated Gruyere and mozzarella cheese, and ground pepper.
Spread softened butter on the outside of each slice of bread. Sprinkle with Parmesan cheese and lightly press down into the butter so it sticks.
Flip two slices over, butter side down, and top with half of the shrimp and cheese mixture.
Top with the second slice of bread, butter side up.
In an Air Fryer
Turn the air fryer ON and set the the time for 5 minutes at 400 degrees using the ROAST or GRILL setting.
When it beeps, place the sandwiches inside the basket and push in to secure.
Cook for 3 minutes then flip the sandwiches over. Cook for an additional 2 minutes, until the air fryer beeps that it is done. If not done to you liking, set the time for an additional one to two minutes and check again.
On the Stove
Place the sandwiches on a heated non-stick skillet over medium heat. Cook until the bottom side is crispy and golden, flip over and continue cooking until the second side is golden.
Remove from the basket/skillet and serve immediately.
Notes
I love the flavor combination of the Gruyere and mozzarella cheeses, but feel free to play with other types of cheese that you like.
Yes you can use larger shrimp if you prefer. Simply place the peeled, deveined shrimp in the garlic butter mixture and cook until pink and opaque.
Feel free to add chopped green onions or Italian parsley to the cheese mixture.
For a true shrimp scampi flavor, add a tablespoon white wine to the skillet when you add the shrimp.
You can always add more garlic and/or lemon for even more flavor.
