Ingredients

white beans*
drained and rinsed
9
ounce package
frozen artichoke hearts
thawed
½
cup
diced onions
4
ounces
spring mix
Dressing
4
Tablespoons
fresh lemon juice

Tablespoons
olive oil

clove
fresh garlic
pressed or finely minced
¼
teaspoon
thyme
sea salt and fresh black pepper
to taste
Instructions
In a large bowl, combine beans, onions, and artichokes.
Pour in the dressing and stir to combine.
Add the lettuce and toss to thoroughly coat.
Refrigerate for 30 minutes before serving.
Notes
White beans are labeled as Cannellini Beans, Great Northern Beans, or White Kidney Beans. They are not Navy Beans.
