Simple Cauliflower Mash
Comfort food doesn't have to be heavy. This Simple Cauliflower Mash tastes like the real thing, and will fool your pickiest eaters.

Ingredients
1
large
cauliflower
(cut into chunks)
2
Tablespoons
olive oil
3
Tablespoons
clarified butter
(ghee, coconut oil)
¼
cup
Cashew Cream
(or coconut cream {in a can})
sea salt and black pepper
(to taste)
Instructions
Place chunks of cauliflower into the bowl of a food processor, and pulse until cauliflower is in little pieces.
Place cauliflower rice in a medium saucepan with olive oil, salt and pepper.
Cover and cook over medium heat until softened, about 4 - 5 minutes.
Remove from heat and add the butter and cashew cream.
Blend with an immersion hand blender, or a potato masher until smooth.
Season with salt and pepper to taste and serve.
Notes
Serving size will vary based on how you are using the Cauliflower Mash, and the size of your cauliflower.
If potatoes are too dry, add additional cashew cream to thin.
If you do not have a food processor {I have an
older version of this one
} you can also grate your cauliflower with a box grater.
You may also be able to find cauliflower “pearls” in the produce section and you won’t have to do anything but empty the bag.

You want your
Cashew Cream
to be the consistency of heavy cream.
If you are using coconut milk, make sure you shake the can before you open it so it is mixed together.
