Papaya Mango Parfait
Start your morning off with this luscious Papaya Mango Parfait with Greek yogurt, granola, honey, and of course chunks of papaya and mango!

Ingredients

cup
Greek yogurt
I used Fage 5%
1
teaspoon
pure vanilla extract
1
tablespoon
honey
0.5
cup
granola
1
cup
papaya chunks
1
cup
mango chunks
Instructions
Mix the yogurt, honey and vanilla together until smooth and well combined.
Spoon 0.25 cup of yogurt into the bottom of a glass, or small bowl.
Sprinkle .25 cup of granola over the yogurt then top with chunks of papaya and mango.
Serve immediately or cover and store in the refrigerator for up to 5 days.
Notes
For vegan parfaits - use coconut yogurt and substitute agave nectar or maple syrup for the honey.
These parfaits are gluten-free if using certified gluten-free oats. Double-check the package if needed.
If using flavored yogurt, skip the vanilla and probably the honey. Check the label to see if sugar has been added.
Substitute thawed, frozen papaya and mango chunks if fresh is not available.
