Ingredients
1 ½
pounds
Yukon gold potatoes
cut into small cubes and wedges
1
teaspoon
onion powder
1
teaspoon
garlic powder
½
teaspoon
paprika
1
teaspoon
herbs de provence
½
teaspoon
sea salt
½
teaspoon
freshly ground black pepper
½
cup
panko flakes
¼
cup
olive oil
Instructions
Preheat oven to 450 degrees.
Mix all dry ingredients together in a small bowl. Set aside.
Slice potatoes in half, then slice into quarters. Place in a large bowl. (Do not peel the potatoes).
Add the olive oil and toss together to coat.
Add the panko/spice mixture and toss to evenly coat potatoes.
Pour potatoes onto a large baking sheet.
Bake for 30 minutes, or until potatoes are soft inside and crispy outside.
Notes
You can use Yukon gold, red bliss, or any combination of small yellow fleshed potatoes.
