This baked salmon is tender and flaky and topped with a sweet and spicy pineapple salsa to create an easy and delicious meal any night of the week!

Ingredients
Pineapple Salsa

fresh pineapple, diced

diced red bell pepper

diced sweet yellow onion

zest and juice

Baked Salmon

ounces
wild-caught salmon
4 - 6 ounce fillets

sea salt

olive oil
Instructions
Preheat oven to 425 degrees.
Place all salsa ingredients in a bowl and toss to combine. Set aside.
Place the salmon fillets in a baking dish and sprinkle with sea salt and pepper, then drizzle with olive oil.
Bake for 10 to 15 minutes, until salmon is opaque and cooked through. Remove from oven and allow to sit for 5 minutes before serving.
Serve salmon with .5 cup of pineapple salsa.
Notes
You will have a bit of salsa leftover for late night snacking.
All ovens cook differently. Start with the lower time and work your way up if needed.
Feel free to substitute
Southwest Seasoning
for the salt and pepper for even more flavor.
Use any type of baking pan that you have on hand
For spicier salsa, substitute serano or habanero pepper.
