Cafe Mocha Cupcakes

Today, Princess Cassi turns 19 years old!!! She is currently in Venice, Italy sailing around on a private boat…what a life! The rotary sponsors several trips throughout the year. This trip is to Croatia, with side trips to other countries, including Venice. She is one very lucky young lady 🙂 So far she has been tagged in a photo while attending Soiree Playboy…..WHAT?
I guess I better show you the Cafe Mocha Cupcakes that I promised before I continue with the story. 🙂
Cassi never did explain what Soiree Playboy was or why she was there. She has also developed a love of wine while traveling around Europe, and she has already told me that she is not happy about not being able to purchase wine for 2 whole years after she comes home! Oh boy, this should be fun! 😉
I am really glad to see that she is having so much fun, I just hope the rest of her life is as big of an adventure! 🙂
In honor of your birthday Cassi, I have baked you some cupcakes. You will notice…they do not contain any alcohol, as per your usual request 🙂 Although, I bet I could make some with wine that you would like!!!
They turned out really pretty, but they didn’t look like Cafe Mocha Cupcakes! So I scraped off the blue beads, and drizzled some chocolate syrup over the top, and poured on some sprinkles…..Voila!
Now those LOOKS like Cafe Mocha Cupcakes! Would you like to know how to make them?
How to make Cafe Mocha Cupcakes:
Preheat oven to 350 degrees.
Whisk together the dry ingredients in a large bowl.
Add the liquid ingredients and beat together until smooth, about 2 minutes.
Evenly divide batter between 24 cupcake liners, and place in (2) muffin pans.
Bake for 25 – 30 minutes, or until a toothpick comes out clean.
Frost with your favorite icing, and decorate as desired.
Notes:
- You can also bake in (2) 9″ round cake pans for 40 minutes.
- This is my favorite Buttercream Frosting recipe.

- 2 cups granulated sugar
- 2 cups unbleached all-purpose flour
- 3.4 ounce package devil's food instant pudding
- ¾ cups unsweetened cocoa powder
- 1 Tablespoon espresso powder
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 4 large eggs
- ¾ cups canola oil
- 2 teaspoons pure vanilla extract
- 1 ¼ cups fresh brewed espresso 4 double shots)
- chocolate syrup garnish
- sprinkles garnish
Instructions
- Preheat oven to 350 degrees.
