Ingredients

Pineapple Topping

  • 8 pineapple rings I used canned
  • 6 Tablespoons unsalted butter
  • ¾ cup light brown sugar, packed

Cake Batter

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon fine sea salt
  • 6 Tablespoons unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 Tablespoon dark rum
  • ½ cup pineapple juice
  • 2 Tablespoons dark rum to top the cake

Instructions
