What is the difference between gravy and Au Jus?
Gravy is made using the juices from beef that has been roasted in an oven, or that has been prepared in an Instant Pot or Slow Cooker. It is then thickened using a roux made with flour or slurry made with cornstarch.
Au Jus is the same juices that are refined (strained to remove the bits) and cooked down to your desired consistency to produce a clear, slightly thickened liquid.
How do you thicken gravy?
The most common way to thicken gravy is by cooking wheat flour in a fat to create a ‘roux’. The flour is cooked to remove the flour taste, break down the proteins, and to darken the gravy
You can also use cornstarch, which is a true starch and actually thickens better than wheat flour. Your gravy will also be more translucent and have a nice, glossy sheen. Create a slurry by mixing cornstarch with water, then add it to the hot liquid.
The third option is to create a slurry using potato starch, which is also a starch with good thickening powers. Your gravy will be more opaque than with the cornstarch, but less than with flour.
Whole30 – Paleo – Keto Gravy
Use .25 teaspoon of Glucomannan per 8 ounces of liquid. Simply sprinkle it over the liquid and whisk to combine. It will thicken as it cools, so don’t add too much extra trying to speed up the process. Unless of course you are trying to make beef flavored wallpaper paste!
