Hawaiian Chicken Grillers are one of my favorite things to cook on the grill (or bake in the oven)! Chicken breasts wrapped around ham and pineapple and secured with bacon, what's not to love?
Place chicken breasts between two sheets of plastic wrap on a hard surface. Use a rolling pin to flatten out the chicken breasts until they are an even thickness, but not too thin. I place my hand on top to “feel” if they are even.
With the smooth side of the chicken breast facing down, place a small amount of ham cubes in the center of the chicken breast. Place pineapple chunks on top of the ham.
Roll up the side to enclose the filling and use a toothpick to secure.
Place a strip of bacon on your work surface, then place a second piece on top to form a cross. Place the chicken packet on top of the bacon and wrap once slice around to hold the chicken together. Now take a second strip of bacon and wrap it around the opposite direction to completely enclose the chicken and filling. Sprinkle with paprika, sea salt, and black pepper.
Place chicken grillers on a preheated grill and cook for 10 minutes.
Flip over and cook for an additional 10 - 15 minutes or until internal temperature reaches 170 degrees. If bacon doesn't want to stay in place, just try to maneuver it back into place with your fingers or an extra pair of tongs....or leave the toothpicks in place while grilling.
Remove from grill or oven, and allow to rest for 5 – 10 minutes before serving.
In the Oven:
Place grillers in an uncovered baking dish and sprinkle with paprika, sea salt, and black pepper.
Bake uncovered in a preheated 350 degree oven for 40 to 50 minutes.
