Hawaiian Chicken Grillers

Hawaiian Chicken Grillers are one of my favorite things to cook on the grill! I used to buy them at the local grocery store, but once I realized how simple they are to make…..I started making my own. They are really, really easy to make and do not require any special gadgets. 🙂

How to make Hawaiian Chicken Grillers:

Place chicken breasts between two sheets of plastic wrap on a hard surface. Use a rolling pin to flatten out the chicken breasts until they are an even thickness, but not too thin. I place my hand on top to “feel” if they are even.

Slice the chicken breasts in half to form 4 equal portions. For larger grillers, use 4 separate breasts and skip this step.

With the smooth side of the chicken breast facing down, place a small amount of ham cubes in the center of the chicken breast.

Place pineapple chunks on top of the ham.

Roll up the side to enclose the filling. Don’t worry if it won’t stay together, just give it a try.

Place a strip of bacon on your work surface. Place the chicken packet on top of the bacon and wrap it around to hold the chicken together. Now take a second strip of bacon and wrap it around the opposite direction to completely enclose the chicken and filling.

Place chicken grillers on a preheated grill and cook for 10 minutes.

Flip over and cook for an additional 10 – 15 minutes or until internal temperature reaches 170 degrees. If bacon doesn’t want to stay in place, just try to maneuver it back into place with your fingers or an extra pair of tongs.

*Alternate cooking method – Place grillers in an uncovered baking dish, and bake in a preheated 350 degree oven for about 40 minutes.

Remove from grill or oven, and allow to rest for 5 – 10 minutes before serving. I serve mine with Teriyaki Sauce or Whiskey Glaze.

See, I wasn’t lying….totally easy to make! The other reason that I started to make my own, was so that I would know exactly what products were being used. You will notice that the recipe calls for organic chicken breasts and un-cured bacon. I tried to find the least processed ham cubes that I could and the pineapple was cut up by yours truly 🙂  The ones that you purchase at the grocery store are also much bigger, like they used chicken breasts from a scientific experiment huge! These are much closer to the appropriate size for a meal.

The sauce that you see above is my Whiskey Glaze, which worked perfectly with my Italian Pasta Salad. Normally I use Teriyaki Sauce and serve it with rice and vegetables.. Alex prefers his with Bourbon and Brown Sugar Barbecue Sauce! 🙂

Notes

Chicken breasts come in all different sizes, so cutting them into equal portions can be tricky. To make it easier, you could just buy 4 breasts, flatten them and use them without cutting. Just make sure to adjust the amount of filling that you will need.
