Hawaiian Chicken Grillers are one of my favorite things to cook on the grill (or bake in the oven)! Chicken breasts wrapped around ham and pineapple and secured with bacon, what's not to love?

Once I realized how simple they are to make, I started making my own rather than buying them. Top them with Teriyaki Sauce, Whiskey Glaze, or Pineapple Bourbon Barbecue Sauce for the perfect finishing touch!

    What you will need:

    • boneless, skinless chicken breasts
    • chopped ham
    • pineapple tidbits or small chunks, fresh or canned
    • thick-cut bacon
    • paprika, seas salt, and black pepper
Chicken breasts, chopped ham and pineapple, bacon slices, and seasonings in white bowls.

How to make Hawaiian Chicken Grillers on the grill:

Place chicken breasts between two sheets of plastic wrap on a hard surface. Use a rolling pin to flatten out the chicken breasts until they are an even thickness, but not too thin. I place my hand on top to "feel" if they are even.

Four chicken breasts flattened between two pieces of plastic wrap by a rolling pin.

With the smooth side of the chicken breast facing down, place a small amount of ham cubes in the center of the chicken breast. Place pineapple chunks on top of the ham.

Chopped ham and pineapple placed in the center of three chicken breasts.

Roll up the side to enclose the filling and use a toothpick to secure.

Chicken breasts wrapped around pineapple and ham chunks with a toothpick to hold the ends together.

Place a strip of bacon on your work surface, then place a second piece on top to form a cross.

Two slices of bacon laying in a cross pattern on a white cutting board next to a chicken breast wrapped around pineapple and ham chunks.

Place the chicken packet on top of the bacon and wrap once slice around to hold the chicken together. Now take a second strip of bacon and wrap it around the opposite direction to completely enclose the chicken and filling. Sprinkle with paprika, sea salt, and black pepper.

Bacon wrapped around chicken breast to create a small package.

Place chicken grillers, seem side down, on a preheated grill and cook for 10 minutes.

Four bacon wrapped Hawaiian Chicken Grillers on the grill.

Flip over and cook for an additional 10 - 15 minutes or until internal temperature reaches 170 degrees. If bacon doesn't want to stay in place, just try to maneuver it back into place with your fingers or an extra pair of tongs....or leave the toothpicks in place while grilling.

Remove from grill or oven, and allow to rest for 5 - 10 minutes before serving.

How to bake Hawaiian Chicken Grillers in the oven:

Place grillers in an uncovered baking dish and sprinkle with paprika, sea salt, and black pepper.

Four bacon wrapped chicken grillers in a white baking dish sprinkled with paprika, salt and pepper.

Bake uncovered in a preheated 350 degree oven for 40 to 50 minutes.

    Now wasn't that easy?

    Serving Suggestions:

The sauce that you see in the original image above is my Whiskey Glaze, which worked perfectly with my Italian Pasta Salad. I also like to use Teriyaki Sauce and serve it with Fried Rice or Hawaiian Potato Mac Salad. Alex prefers his with Bourbon and Brown Sugar Barbecue Sauce!

    • Cutting Board
    • Chefs Knife
    • Meat Thermometer
