    Lemon Cookies

    Welcome to the fourth and final week of the Clean Eating Challenge 2014. I hope you have enjoyed the clean and healthy recipes over the past month. I have had a lot of fun with this Challenge, and I wanted to make a dessert this week to celebrate, a dessert that includes lemon of course.....

    because I am a tad bit obsessed! So I created these delicious Clean Lemon Cookies...twice! The first batch were actually Paleo Lemon Cookies, and I got sick after eating them??? How? What? Coconut Flour! Apparently coconut flour and I cannot be friends. So those went away and I went back into the kitchen, and boy oh boy am I glad that I did!! I like these sooooo much better.

    These little gems have  a shortbread quality about them, and just the right amount of lemony flavor.....delicious! They kind of remind me of Pecan Sandies, but with almonds and lemon. 😉

    How to make Lemon Cookies:

    Start by beating your butter (or coconut oil for vegan) with the raw/turbinado sugar and vanilla. Add the lemon zest, almond flour, and oat flour and mix to combine. Unless of course you are having a bad day, then you just dump all of the ingredients together in a big bowl.....

    and beat them together until smooth.....

    The dough will not be completely smooth, because raw sugar has pretty large granules, but you get the idea. Scoop dough with a 1 Tablespoon cookie scoop, or roll into 1 1/2" balls and place on a parchment covered baking sheet.....

    Bake in a preheated 300 degree oven for 30 to 35 minutes.....

    As you can see, these cookies do not spread much. Leave on the baking sheet to cool for at least 10 minutes, or they will fall apart when you try to move them. Move to a wire cooling rack and cool completely before serving.

    If you do not have Oat Flour, I assume that you could use unbleached, all-purpose flour, but I have not tried it. 😉

    Ingredients

    • ½ cup unsalted butter softened (substitute coconut oil or vegan butter for vegan)
    • ½ cup raw sugar
    • 1 teaspoon pure vanilla extract
    • zest of one lemon
    • 1 cup finely ground Almond Meal/Flour I used Bob's Red Mill
    • 1 cup oat flour I used Bob's Red Mill {gluten-free}
    Prevent your screen from going dark

    Instructions

    • Preheat oven to 300 degrees. Line two baking sheets with parchment paper and set aside.
    • In a large bowl, beat together butter, vanilla, and raw sugar until creamy.
    • Add the almond flour/meal and oat flour. Stir to combine.
    • Use a 1 Tablespoon cookie scoop or roll into 1 1/2-inch balls and place on baking sheets.
    • Bake for 30 to 35 minutes. Allow to cool on baking sheet for 10 minutes.
    • Move cookies to a wire cooling rack and cool completely before serving.
