Chocolate Mint Truffle Snowballs

Today is the Food Blogger Cookie Swap reveal day!! Everywhere you look today, you will find cookies, cookies, and more cookies!! This is the second year that I have participated in this wonderful fundraiser, and I can’t wait to do it all over again next year as well. Last year I made Chocolate Chip Oatmeal Pecan Cookies, and this year I made Chocolate Mint Truffle Snowballs…..
At first glance, they look like Russian Teacakes…but these little gems are actually so much more…..
Chocolate cookies baked with Hershey Mint Truffle KISSES in the center and coated in powdered sugar…yum! All of your friends and family {and even Santa} will be happy to receive these cookies…..
How to make Chocolate Mint Truffle Snowballs:
Preheat oven to 350 degrees. Line baking sheet with parchment paper or silpat liner, set aside.
Beat together sugar, butter, melted chocolate, and vanilla until creamy…..
Stir in flour and salt until dough is thoroughly combined…..
Add 1 to 2 Tablespoons of milk if dough is too dry…..
You want it to stick together, but not be sticky. 😉 Scoop 1 Tablespoon of dough…..
and fill with a truffle kiss…..
Roll into a ball…..
Place on prepared baking sheet…..
Bake for 12 to 15 minutes until set, but not brown…..
Allow to cool slightly then roll in powdered sugar. Place on a wire cooling rack and cool completely…..
Once cooled, roll again in powdered sugar to thoroughly coat…..
I like to place my sugar coated cookies in cupcake wrappers to keep them from “coating” all of the other cookies on the plate with powdered sugar…..
It also helps to protect the cookies when shipping them across the country {Massachusetts – New York – Texas} . I place each cookie in a small plastic zipper bag then place it in a cupcake box…..
Each small bag contains 6 cookies {1 dozen total} , then I wrapped it all up pretty tissue paper…..

Chocolate Mint Truffle Snowballs
Ingredients
- ½ cup unsalted butter
- ¾ cups powdered sugar plus additional for coating
- 1 Tablespoon pure vanilla extract
- 1 ounce unsweetened chocolate melted
- 1 ½ cCups all-purpose flour
- ⅛ teaspoon salt
- 25 Unwrapped Hershey Mint Truffle KISSES
Instructions
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper or silpat liner, set aside.
- Beat together butter, sugar and vanilla until creamy.
- Add the melted chocolate and beat to combine.
- Stir in flour and salt and mix until dough holds together. If dough is dry, add 1 to 2 Tablespoons milk.
- Scoop out dough, place a mint truffle KISSES in the center and roll into a ball.
- Place 1 inch apart on prepared baking sheet and bake 12 to 15 minutes until set, but not brown.
- Allow cookies to cool enough that they can be picked up. Roll in powdered sugar and place on a wire cooling rack.
- Allow to cool completely, then roll again in powdered sugar.
- Serve.
